Pineapple, Coconut & a Cap’n Crunch Crust

Finding Dory’s Cheesecake
for the crust
2 cups Cap’n Crunch cereal
1 cup flour
¼ cup sugar
¾ cup butter, melted

for the cheesecake
2- 8oz packages of cream cheese, softened
¼ cup sugar
¼ cup coconut milk
2 eggs
1 tsp coconut extract (or vanilla if you can’t find coconut)
1- 20 oz can of crushed pineapple, drained
2 cups shredded coconut
3 tbsp butter, melted
blue food dye
Finding Dory gummies or other sea creature candies

Preheat oven to 350°F.

Pulse together the crust ingredients in a food processor until crumbly. Spoon into the cavities of mini cheesecake pans or muffin pans and press into the bottom. Bake for 15 minutes. Let cool.

Blend together cream cheese, sugar, milk and eggs. Fold in extract and pineapple. Spread over crust.

Bake for 15 minutes.

Meanwhile, whisk together melted butter and 6 drops of blue food coloring. (I used the Neon.) Toss the coconut into the mixture.

Remove the cheesecakes from the oven and sprinkle the coconut on top. Bake for another 5 minutes (or until a toothpick inserted comes out clean).

Let cool. Top with a gummy.

Serve to children or adults. (I will be serving to adults who act like children.)
