IPA Key Lime Cheesecake

It’s summer. The last thing you want to serve your guests is milk and cookies, warm from the oven. Though you want something a little fancier than store-bought ice cream, amiright?

I figured now was the perfect time to bust out this Key LImePA Cheesecake. Tart key limes and Ithaca Brewing Company’s Fleur de Belgique, an aromatic, hoppy IPA (brewed with Trappist yeast) makes this make-ahead dessert a refreshing and delicious option for your next barbecue.

So break out the beers and get cooking! Early in the morning, is it? Doesn’t matter, you’re cooking! (I love that excuse.)

IPA Key Lime Cheesecake
based on kraft.com
juice of 1 key lime
zest of 3 key limes
¼ cup sugar
½ cup Ithaca Fleur de Belgique
½ cup powdered sugar
1 tsp vanilla
16 oz cream cheese, softened
2 eggs
1 graham cracker crust
additional lime zest, for garnish

Preheat oven to 350°F.

With a mixer, blend first seven ingredients until smooth. Add in eggs. Blend.

Pour mixture into pie crust. Bake for 40 minutes. (Middle will still be slightly jiggly.)

Remove from oven and let cool for 20 minutes. Refrigerate for 3 hours.

Serve with additional lime zest.
