Honey Chicken & Corn Chowder

I type this as I look out the window on snow covered trees and big beautiful flakes falling to the ground. Faintly, outside, I hear my neighbor spinning his tires trying to get out of the driveway.

It’s beautiful.

No, seriously. I fucking love winter. Here it is, February and people are complaining that the groundhog wants more snow and “when will it be spring”. But you know what people, this is MY season. You get your long summers. You get to go to the shore from June until September. Let me have my full winter! This has been the most satisfying winter I’ve had since I’ve moved to Philly. Tons of snow and it hasn’t stopped. I want more.

But to keep all of you warm throughout this blistering cold season, I’ve whipped up a ridiculously easy and so so so good honey chicken and corn chowder. It’s sweet, warm and hearty. Not to mention, you could throw it in the crock pot before work and have a hell of a dinner when you get home.

Curl up with a bowl and curse me while I go outside and play.

Warm Up Your Shit (Honey Chicken Corn Chowder)

Honey Chicken & Corn Chowder
5 lbs chicken thighs, skinned, trimmed and diced
32 oz chicken broth
¼ cup honey
4 potatoes, peeled and diced
2 carrots, peeled and diced
½ onion, peeled and diced
1 tbsp salt
½ tbsp white pepper
½ tbsp dry rubbed sage
1 lb frozen corn
2 cups half & half
2 heaping tbsp corn starch
2 tbsp water
bacon, crumbled (for garnish)

In a slow cooker, dump your chicken, broth, potatoes, carrots, onion, salt, pepper and sage. Stir.

Cook for 6-8 hours on high (or 8-10 hours on low), until potatoes are soft.

An hour before serving, combine corn starch and water. Stir half and half, corn starch mixture and corn into the chowder.

Serve with a mound of bacon on top.
